Pat Puk Ruamit (Mixed Mushrooms with Spinach and Bean Sprout
Ingredients :
· 2 tbsp peanut or vegetable oil
· 1 bunch of coarsely chopped scallions
· 1 crushed garlic clove
· 1-inch/2.5 cm piece of peeled and finely chopped fresh ginger root
· 6 oz/175 g baby white mushrooms
. 6 oz/175 g shiitake mushrooms, halved
· 6 oz/175 g closed-cup mushrooms, quartered
· 4 oz/115 g spinach leaves
· 3 tbsp soy sauce
· 1/3 cup fresh bean sprouts
· 2 tbsp sweet chili dipping sauce
Serve with noodles or cooked rice

Cooking Procedures :
1. Heat the oil in a preheated wok.
2. Add the scallions and stir-fry over medium-high heat for 1-2 minutes.
3. Add the garlic and ginger and stir for 1-2 minutes.
4. Add all the mushrooms and stir-fry over high heat for 2-3 minutes or until the mushrooms start to soften and brown.
5. Add the soy sauce. spinach, and bean sprouts and stir-fry for 2-3 minutes, or until the spinach has wilted.
6. Stir in the chili sauce.
7. Serve immediately with noodles or cooked rice.
Light, Refreshing desserts like this are ideal after a spicy meal.
