Thai Basil Chicken Recipe


Ingredients :

· 2 tbsp vegetable oil
· 4 finely chopped spring onions
· 4 crushed garlic cloves
· 1 deseeded and sliced thinly green pepper
· 4 deseeded and finely chopped green chillies
· 600 g/1 lb 5 oz skinless, boneless chicken breast fillets and cut into thin strips
· 25 g/1 oz fresh roughly chopped Thai basil leaves
· 2 tbsp fish sauce
· garnish with basil leaves

Cooking Procedures :

1. Put chicken breasts in freezer until firm but not frozen solid.

2. Cut chicken into tiny slivers.

3. Heat the oil in a wok.

2. Add the garlic and spring onions and cook for 1-2 minutes, or until soft but not brown.

3. Add the chilli and green pepper and cook for another 2 minutes.

4. Add the chicken and cook until browned.

5. Stir in the basil and fish sauce, and cook for a few more minutes, or until the chicken is cooked through.

6. Garnish with basil leaves.

7. Serve with Rice if desired.
