Yam Neua (Grilled Beef Salad)
Ingredients :
· 600 g/l lb 5 oz rump steak
· 50 g/ 1 3/4 oz dried oyster mushrooms
· 1 red pepper, deseeded and sliced thinly
· 40 g/ 1 1/2 oz roasted cashew nuts
· to serve with red and green lettuce leaves
· to garnish with mint leaves
Dressing
· 2 tbsp sesame oil
· 2 tbsp fish sauce
· 2 tbsp sweet sherry
· 2 tbsp oyster sauce
· 1 tbsp lime juice
· 1 deseeded and chopped finely fresh red chilli

Cooking Procedures :
1. Place the mushroom in a bowl, cover with boiling water and leave to stand for 20 minutes. Drain and cut into thin slices.
3. Grill the steak, either under the grill or on a ridged iron grillpan, turning once, for 5 minutes, or until browned on both sides and rare in the middle, or cook longer if desired.
4. Slice the steak into thin strips and place in a bowl with the mushrooms, pepper and nuts.
5. Add the dressing (check below on how to make the dressing) and toss together.
6. Arrange the lettuce on a large serving platter and place the beef mixture on top.
7. Garnish wiht mint leaves.
8. Serve at room temperature.
To make the dressing
Place the sesame oil, fish sauce, sherry, oyster sauce, lime juice and chilli in a bowl and whisk to combine.
