Gai Pao Bai Kaprow (Chicken and Chili with Basil)
Ingredients :
· 350g skinned boneless chicken breasts
· 3 tbsp vegetable oil
· 1 tsp sesame oil (optional)
· 3 chopped spring onions
· 30g hot chilies or 2-3 green chilies, seeded and chopped
· 40g loosely packed sweet basil leaves and roughly chopped
· 2 1/2 tbsp fish sauce (nam pla)
· 1 tsp toasted coriander seed and grind to a fine powder
· 1 tsp sugar, salt and pepper
· lettuce leaves to serve

Cooking Procedures :
1. Cut chicken into a very small cube and saute in the oil until it is very slightly cooked then remove and keep warm.
2. Saute the chilies and onions briefly.
3. Placed the chicken meat in the pan, add the basil leaves, fish sauce, sugar, salt, pepper and cook briefly then remove from the heat.
4. Place the lettuce leaves on the plate and arrange the chicken on top and sprinkle the coriander.
5. Serve at once.
