We usually think of rice and noodles as a perfect accompaniment to main dishes, but they can make an equally satisfying main dish as a lunch, supper or even breakfast in their own serving.
In Thai cuisine, flavor is incorporated into plain rice by stir-frying it in oil and then cooking it with stock and/or coconut milk. While rice noodles and egg noodles offer a contrast in both texture and taste, and they also came in different thickness. Both noodles form a main ingredient of a dish. They first need to be cooked in boiling water and to prevent them from sticking together, once cooked and after being drain, rinse them under cold running water and set aside ready to use later, or toss them in peanut or vegetable oil or soy sauce. Noodles are usually added to the other ingredients at the final stage of cooking.
